You might want to choose for the alternative and let your wife apply for the Non Immigrant O visa based on visiting Non Thai Family which has NO financial requirements and once in Thailand she can apply for matching Extensions of Stay based on your Extension of Stay, which for her does not have financial requirements.

They love to call it the "piggy back visa" on this page

As you write you are on an Extension of Stay and you signed the document that you understand the rules and regulations.

why ask if you understand the rules, but okay, your employer is WRONG.

According to the signed STM2 form YOU need to cancel this Extension of Stay using the last day of working as the last day of this permitted to stay period.

AS you also signed documents to get a Work Permit it is YOU who has to cancel this work permit at the Ministry of Labor.

YOU and ONLY YOU is responsible to do this.

The Thai Embassy in France has the requirement to apply for a NEW Non Immigrant O visa based on retirement, at least 24.000 Euro about 900.000 thb into a bank account for the last 3 months prior application.

I do not understand the lucky part, every foreigners needs to be registered at the address within 24 hours, a law since 1975.

You accept to pay and rent the place, even with knowledge that you will have problems to stay long term in Thailand as this registration is needed for application, OR you say sorry, I go elsewhere where the landlord does register me and avoid problems at Immigration.

Not luck , just a choice to make.

You have to cancel your work permit and this Extension of Stay using the last day of working.

It is easy to know. Open your passport, look at the last stamp.

IF that is a small square stamp with Admitted Untill, you can stay until that date.

BUT if you visited Immigration Office and got a big stamp with the text Extension of Stay permitted up to xx/xx/xx, than the xx/xx/xx date must be the last day of working. If that day is in the past your are in overstay since that day until you make your way into the Immigration Office to cancel yours stay based on employment.
