To quit your job you inform first your employer, best with a letter with end date of employment.
Than you go to Minsitry of Labor to cancel your work permit on day you quit working.
Than you go to Immigration Office, if you stay inside Thailand on an Extension of Stay, with the papers from Ministry of Labor to cancel your Extension of Stay at the date you stop working. You can do this in advance. If you meet requirements you can apply for new Extension of Stay if not you have to leave the country and if you like to come back organize a Visa or use the Visa Exempt Entry.

TLDR : Answer Summary
To cancel your work permit and Extension of Stay after quitting a job in Thailand, first inform your employer and provide a resignation letter. On your last working day, visit the Ministry of Labor to cancel your work permit. Then, go to the Immigration Office with documents from the Ministry to cancel your Extension of Stay, which can be done in advance. If you meet requirements, you may apply for a new Extension; otherwise, you'll need to leave Thailand.
Tod Daniels I just contacted the immigration office in regards to the forms I need to bring to cancel my Extension of Stay and it's a long list that I don't think my work have prepared for so should be interesting.... they have requested the items we all talk about and that I have used before; your passort, Letter from the company stating you last official working date and the cancellation slip of work permit but they also have requested the Company of Partnership registration certificate, ID Card / Passport of the authoriser of the company and Income tax certificate from the revenues department.....
even if I only have half of the paperwork (passport, letter from company and work permit cancellation slip)? As work don't seem to be willing to provide me with all the other requirements I have just been informed about by immigration (and in fairness not things that I had on me last time I left my work).
hey Todd, thanks for this. But will this affect me getting back in again if i have an extension denied as I will be doing a quick flight out and coming back in again on a visa exempt entry as I need to organise time for the cat to be sorted for quarantine that can't be done in a week so need a 30 day tourist visa to sort before leaving Thailand. But if I can do both, that would be ideal.
work have all the files and will be delivering them to me on the Friday not before so I will be heading there on my last day unfortunately. So it seems that I will need to book a flight out for that evening and come return on an exempt visa entry to gain enough time to pack up and sort kitty out! :) in case I have any issues with the extension of stay application which i think I might do as I will only be turning up with half of the required forms....
Your Extension of Stay based on Working ends on the day you stop working. You could go to cancel WP and Extension of Stay in advance. If you wait till the last day, there is no 24 hours or grace period. You can apply for a new Extension of Stay directly after cancellation and if you won't meet any requirements it would be denied and you will get 7 days to leave the country, it will still cost 1.900 Thb for the application.
