And for yourself: Get the document from the organisation before you make your way into Thailand. Get the Non Immigrant O visa based on being a volunteer, on entry get 90 days of stay stamped in your passport. Pick up your Work Permit and with this in your pocket you can start to do your volunteer job, after 60 days you can with help of the organisation apply for the 1 year Extension of Stay.

Be careful, not many NGO are that big to apply for conversion of Visa Exempt Entry or Tourist Visa inside Thailand. Most volunteers make their way to Thailand, pick up some documents and leave to a neighbor country to apply for the visa.
It seems difficult to send document by post or courier to new volunteers.
