The best part of the Non Immigrant O visa or the Extension of Stay based on married with a Thai National is that you are married with a Thai National, as long as she is your fiance you can not use this type of visa as a fiance meens not your wedded partner in Thailand. No idea if this is different in your country.

It can give the impression that you want to stay long term in Thailand without a visa that fits your purpose of stay.

If you can not go on stamped date, contact the Immigration Office and explain your problem.

Best case scenario: They accept your request and you can come on a new set up date

Worst case scenario: They say no and you have to come on stamped date.

Be aware that the funds must be in a Thai bank at least 1 month prior applications, so do not have to much patience by finding a bank

If you are not back before the last date of your permission to stay date, it has absolute no value to buy a re-entry permit as that will be valid until the same date.

Look up the requirements for a new Non Immigrant O visa based on being married to a Thai National, bring all needed copies on the trip and apply for a new visa while abroad.

Just put a date for departure of Thaiand on your application within the 60 days period you get on arrival using the visa.

2 months visa better known as a Single Entry Tourist Visa which gives 60 days on entry.

You can get once a 30 day Extension of Stay based on tourism, than a 60 day Extension of Stay based on visiting family and you might convert your visa into the Non Immigrant O visa based on being married, but for that you need 400.000 Thb on a Thai bank account and some other copies of legal documents.
