To make life easy, there are no travel dates on the visa.

a Single Entry Visa is valid from the date it is issued until 90 days later.

a Multiple Entry Visa is valid from the date is is issued until 365 days later.

There are some long term visa with are even valid for 5, 10 or 20 years.

a Tourist visa gives you 60 days of admitted to stay. You can keep this period active when travel abroad by buying a Re-Entry Permit.

You can buy a Re-Entry Permit but be aware that does not give you extra days, on return you will get the same Admitted until day as you got on your first entry

Yes, a Single Entry visa means you can use this once, on entry the visa get the stamp used and becomes invalid. You get a maximum stay of 60 days and you can leave anyday during those 60 days.

On return you might want to use the 30 day Visa Exempt Entry or buy a new tourist visa at the Thai consulate before travel.

Alternative is the 6 months valid Multiple Entry Tourist Visa, which will give 60 days of stay on each entry during the 6 months validity of the visa.

You applied at the Consulate not at Thai Immigration. But good luck
