I flew Singapore Airlines to get to Thailand. They required PCR test within 2 days of departure. It was a little strange because I bought the tickets a couple months previously, then about a week before departure, they sent me a message telling me my my flight had an upgrade in status and that everybody would have to have a negative test.
If it's not too late. I recommend reaching out to your hotel before booking hotel. Let them guide you through the process. I has serous issues and I think it was because the hotel was slow to respond.
I read in the Bangkok Post people can convert Elite visa into work visa. For the life of me, I couldn't figure out why a person would want to do that.. But I think its a thing now.
It seems Thailand is become more open to the idea of Digital Nomads -- If they want to invest 1,000,000USD
Mexico is an option. I was recently there and thought about bringing my Thai friend down to visit. Cancun/Cozumel very nice to visit. Not too expensive. Panama allows Thai's to stay 180 days.
Bali is open.. I am not sure if American can go, but she can.
I am an American so I say with love. My understanding is, US Embassy are a bunch of dicks. From what I understand the process is not easy and takes a long time. But I have not ever applied for a US visa, obviously. Best of luck to you.
