Unless you’re applying through the Sydney consulate it’s probably not a visa you’re going to get or qualify for. There have been instances where people have got one but very few and far between unless using Sydney.

You should have no issues as you’re doing what a “typical” tourist would do.

They’re out to get the serial “visa runners” or “border bouncers” not genuine tourists.

Departure details are not mandatory fields. Leave them blank. Indeed don’t even click in the boxes otherwise they’ll become mandatory.

I’m currently not in Thailand so I can’t confirm that’s the practice that’s currently happening but that’s what they’ve said will happen. In a couple of weeks I can confirm for sure but let’s see the comments on here to see what’s playing out.

Extensions on visa exempt entries are no longer permitted if you enter via land

Yes. 1st one 30 days, second one 7 days. Assuming you enter via air

Not sure about the policy of the Hong Kong consulate at to whether they’d need to show residence from Hong Kong before applying. Others may know. Plenty of other options in local embassy’s and consulates around Asia like Laos, Cambodia, Vietnam etc. No need to go to the UK.

That’s the theory. In practice it’s almost impossible to do and for most way easier to leave and return for a fresh 180 day stamp.

Each entry gives you a stamp for 180 days. If you stay for 90 consecutive days you must do a 90 day report at immigration.

There is no limit on how many times you can exit and re-enter during the 5 year validity of that visa.
