Get the list of requirements from your specific IO and only 1 visit should be all that's required if you follow the list. I just did my application last week in Chiang Mai, I provided what was on their list, did the document check, got the Q number, submitted the application and got the UC stamp, all in 2hrs. Just waiting for the 27th March for the final extension stamp.

I've never been asked to show my bank balance when getting my extension stamp at Chiang Mai and I don't believe there's an official rule it must stay until you get the stamp, but better safe than sorry! You could always go and ask at your specific IO for confirmation on their policy.

It's never closed and it's on the right side of the immigration booths. I've used it often, as recently as last month, and never been a queue but I always go early then chill in the lounge until my flight. It normally takes 10 minutes if you already have the form filled up with the photo.

... the UC month starts when your current extension expires. I did mine on Tuesday in Chiang Mai and asked that specific question, now I have about 5½ weeks UC.

... exactly, that's what I do in Chiang Mai, withdraw some cash then update the book at 07:15 and head round to the IO for an early queue. The OP just has to remember to make a transaction before the PUM update or it will only update until the previous transaction, which might have been the day before.

For clarity, you are not applying for any visa, you are applying for a re-entry permit, whether that be single or multiple entry!

Yes the Multiple-Entry Tourist Visa (METV) allows multiple entries within a six-month timeframe, with each entry allowing a stay of up to 60 days.

... it matters simply because the immigration offices say so and every IO has it's own twist on the official rules so ultimately, it's their call whether we like it or not!

... Tod's giving sound advice, you say the majority does not so abviously some do so, best for the OP to check with his local IO to be sure his IO is not in the minority.
