The way it was explained to me is the document check is just a check that you have provided the required documents and they look to contain all necessary information. If not they will request additional documentation. This is just a generic check. After this It is then sent to an immigration officer who will assess your application and provide approval or not (Pending Approval).

i have no issues at Jomtiem. They can be a bit slow but otherwise friendly and efficient. It probably helps if your on the right visa and not gaming the system.

Can be as quick as 4 Days and as long as 4 weeks , never had one take longer than 4 weeks. I reckon you'd be close. My last one ( September )went from document checking to pending approval after 7 business days and then was about 10 more business days before it came through. But this is a very busy time of year.

I applied last month and it was ok. Normally if you cannot proceed something is missing, it is not always obvious what.
