I'm stuck in a same/ similar situation. It means that the First Level officer found your documents to be fine and now it's in the court of the Senior Officer for approval. All the best.
The way it was explained to me is the document check is just a check that you have provided the required documents and they look to contain all necessary information. If not they will request additional documentation. This is just a generic check. After this It is then sent to an immigration officer who will assess your application and provide approval or not (Pending Approval).
How to explain: you uploaded documents to apply for a visa and made a payment, now all documents are at the Embassy it goes to the staff member authorized to issue the visa.
BUT before he/she issue the visa they check all documents and that period is called pending approval.
