When you leave the country your 30 day visa exempt stamp is finished. It is no longer valid. If you enter the country again without a visa, you will get another 30 day visa exempt stamp. These are limited to two per calendar year by land border crossing.

Using the wrong terminology can get you the wrong advice. It’s not difficult to understand the difference between visas and extensions of stay although some people seem to insist that it is “oh you know what I meant”. Well, usually people say what they mean. Apparently not here though. People can say visa when they don’t mean visa and anyone pointing that out is subject to ridicule for some reason.

I would drive up to Mae Sai, park the car and walk across the border to Myanmar. Come straight back and get your 30 day visa exempt stamp. Don’t bother taking the car across it’s a pain in the arse and not really worth the hassle.

Buy cheap ticket out of Thailand before 30 days after your arrival. Show that to the airline check-in staff and you'll be fine.

Immigration at the Mae Sai border won’t let people out into Myanmar if, for whatever reason, they wouldn’t be allowed back in to Thailand. The reason for that is that at that border you do not get a visa for Myanmar, you get a day pass which only allows you to stay in the Tachiliek area. There are many reasons why a person would be denied entry but it’s not that there are certain times where they let everyone bounce there and certain times they don’t. It’s that they don’t let anyone bounce there who wouldn’t be allowed back in. At any time.

So don't do it then. It's a law that you can choose to ignore if you want to. You know the result of that choice.

It's a generic form, so 2. is for a different visa. Just put 'Tourist' and '60 days per entry'. To be honest, I don't think they really care about the info on the form. It's the supporting documents (mainly the financial requirements) that matter.

It’s very unlikely that you’ll be refused entry. Those reports of people being refused are people who live permanently in Thailand but use the tourist visa/visa exempt system to enter the country. With your history of genuine visits, you’ll be regarded as a tourist and will be fine.

You could apply for a tourist visa in Romania before you fly to Thailand. That would give you 60 days entry, extendable by 30 days in Thailand and you wouldn’t need a return ticket. However, you already feel the employer isn’t the best so I would proceed with caution and definitely don’t work until you have a work permit.

As others have said, might be an issue with the airline at check-in, might be an issue with immigration (less likely in my opinion). However, to solve both these potential issues, they can buy a cheap flight to a nearby country on one of the low cost carriers (round about £30 each) within the 30 days that their visa exempt entry would allow them.
