If you can't get the dependent visa for your wife, it may be worth looking into the new digital nomad visa. It was just announced and the details are a bit sketchy as of yet but it's meant to be extendable up to 5 years, which could get her across the line age wise.

If you log into an online portal of some kind to do your job, your IP may be tracked or even blocked if you are logging in form outside France/Europe etc. Of course, if your work isn't sensitive they may not check these things at all. You can use a VPN with a server in France to avert this.

By comparison to many countries, it's straightforward and pretty affordable to bring a dog into Thailand, as there is no quarantine period. It does require a fair bit of preparation and paperwork, which will take you a couple months minimum to jump through all the hoops if your dog isn't already chipped and current on rabies vax as others have mentioned. For a dog the size of a cocker spaniel, the most affordable way to transport it is not by a cargo shipment, but as excess baggage in an approved pet carrier under the plane with you (or a friend or family member or trustworthy volunteer). That will run something like US $500 or even less for the travel part, whereas a separate pet cargo shipment tends to run upward of US 2,000+++. Figuring out which flights will accept pets and booking space for the dog is a bit complicated, especially due to the long flight path over. Still, the whole process is stressful. I had help from an experienced pet travel agent when I did this (not from US or I'd send a rec!) Definitely worth looking into international pet relocation experts in your area to help get this done smoothly.

I suspect there's been a miscommunication, like perhaps the dog can only stay 60 days until it will require new paperwork to export again, or something like that? I arrived on a shorter visa exempt stamp and converted to long term visa after arrival, there was no question or issue about that wrt my dog, nor in the past 15 months!

I did e-visa which is paid in advance, but I did spot an ATM machine located immediately next to the VOA processing area at Wattay airport when I passed through a couple weeks ago, so even in a pinch you can get cash there.

It's posted at a number of Bangkok parks that service dogs are allowed (where other dogs are not) so I'm aware that the category exists at very least. Hope someone in one of the dog specific groups can help. There are a few.
