You can invest in a business on any visa or visa exemption. I doubt you'll be able to work legally in the bar.

 Non Imm O gives you 90 days NOT 60 days and saves you converting to a Non Imm O in Thailand as you ALREADY have the visa from your home Country

Much easier to get the Non Imm O visa in the UK. All done online and usually issued within 2-3 days. Save you a ton of paperwork and a day at Immigration in Thailand

 Not sure with the DTV. As it's a long term visa you shouldn't have any problems checking in for your flight.
