I wouldn't use the term 'visa run'

I am just back from 3 week holiday in Vietnam, I always have a printed holiday itinerary with me. The immigration officer was pleased when I offered it to him to check. Confirming 3 cities visited in Vietnam, my accommodation locations and my home flight return date

I got caught with the same thing last year. Thai immigration count the days of arrival and departure as two days - so if you arrive today 4th January and leave tomorrow 5th January it's counted as two days.

I was charged 500baht for one day overstay - my friend who travelled with me didn't get charged.

No visa required for either country - from what you've said it's a bit late now, but I think you would have been better doing 2 or 3 continuous weeks in Thailand. My recommendation for first first visit to Vietnam is flight from Bangkok to Danang. Enjoy your travels

Take a look at this vlog from a guy whose partner is a Thai immigration officer. I am in the exact same position as you and it would seem if you can justify that trip to Vietnam is a holiday and not a visa run, you should be OK.

Make a note of your Visa Application and present it to the immigration officer, I am sure it will be sorted on arrival or you will be given 60 days visa exempt. I am sure they will acknowledge the fact you've applied for a visa ahead of travelling

Arriving 15th January and leaving 15th March is 60 days (Thai immigration count day of arrival and day of departure as two days). Providing you leave before midnight it's not an overstay

Entry requirements

This information is for people travelling on a full ‘British citizen’ passport from the UK. It is based on the UK government’s understanding of the current rules for the most common types of travel.

The authorities in Thailand set and enforce entry rules. If you’re not sure how these requirements apply to you, contact the Thai Embassy in the UK.

Passport validity requirements

To enter Thailand, your passport must have an ‘expiry date’ at least 6 months after the date you arrive and have at least 1 blank page.

Check with your travel provider that your passport and other travel documents meet requirements. Renew your passport if you need to.

You will be denied entry if you do not have a valid travel document or try to use a passport that has been reported lost or stolen.
