Your entry-exit history would still be there for immigration to look up. But if you're away for such a long while, I don't think you'd have any problem.

Be aware, though. She should probably have proof of onward travel within 30 days when boarding without a visa.

Do I need to show a ticket for my onward travel when entering Thailand as a Portuguese citizen on a 60-day stay?

I think it's proof of onward travel within 30 days, if you don't get a visa. But there's a consulate in Bali. Why not try and obtain a visa from there? And yes, you could be required to show cash (20k baht equivalent) and proof of lodging.

I know there are copy shops in Bali, btw. Maybe ask your hotel?
