I am a Portuguese citizen and will stay in Thailand for 60 days.
The question is when entering the country do I have to show a ticket for after the 30 days or is it ok if it's only for the 60 days already?
I'll do the extension on the emigration but want to make sure I enter the country without any issue.
Also, I am in Bali and don't have a place to print the ticket and the proof of having money, is that still required?

Depends on the Immigration Officer, they could ask for proof of onward travel within the validity of your stay, ie 30 days and proof of funds plus an address in Thailand. Highly unlikely though unless you have an extensive history of entering Thailand on visa exemptions and tourist visas
Thailand Immigration can ask for three things. Proof of funds as in 20.000 Thb or equivalent currency in CASH, proof of onward travel and proof of accommodation. That you can not print proof of having cash in your pocket is not an excuse. It must be CASH and not printed monopoly money.
I think it's proof of onward travel within 30 days, if you don't get a visa. But there's a consulate in Bali. Why not try and obtain a visa from there? And yes, you could be required to show cash (20k baht equivalent) and proof of lodging.
I know there are copy shops in Bali, btw. Maybe ask your hotel?
