my issue is getting the paperwork to prove I had the savings and investments prior to this year. Some if my investments are tax free in UK so I dont know how that works.

I have talkmobile uk sim and thai sim in dual sim Samsung. Only turn uk sim on when I am expecting an authorisation text. Dont do anything that makes your uk bank suspect you live in Thailand or they could close your account. That's what happened to me.
