Yes was before covid but i travel a lot and normally on one way tickets (seamans) and have noticed a big difference since covid. Before covid guess was asked about 5 % of time i reckon i get asked over 50 % of times now

its rarely the IO its the airlines asking for tickets, its on the IATA guidelines for Thailand. More so since covid as airlines can be liable if person has not shown an onward ticket

Go to UK gov website and follow instructions. She can apply for a tourist visa.

She will need provide proof that she will return to Thailand. Job, property etc. Its VFS that handles visa applications now not the embassy.
