Approximately how long before boarding the plane is it recommended to arrive at the airport? When exactly at what point of the boarding process can I request a single exit stamp?

Yes, that's what I'm planning to get, most likely at Don Mueang or Suvarnabhumi airport. I don't have any concrete plans so far.

Organic food is rare in Thailand, but in Bangkok you do have some options. The best place for you to stay in near Ortorkor market, that's Thailands organic food hub. Also Chamlongs Asoke is basically across the street from it, which is another great place for organic food.

What denomination do you belong to? I married a Buddhist girl from Thailand and it does present some challenges, but I married her because she has a good character. Had I found a Christian girl with a character similarly good as hers who wanted to marry me first I would have gone for her. You can find Christian girls in SEA, the Philippines are mostly Catholic and Vietnam has a Catholic minority. In Thailand however there are only a few. You could however try your luck here, visit a Church and see if there are any bachelorettes around. They have several churches in Bangkok, Catholic, Eastern Orthodox and I'm sure a variety of protestant churches. Personally while I do not belong to a denomination anymore the only one that I would even consider joining is the Orthodox church.

I would stay here on an ED visa, some Muay Thai dojos for instance offer one year and IIRC even multiple year visas, and then after you've lived here a long enough time you can decide if you would like to stay in this country and buy a 10 year elite visa.
