Who is "They"? If it is immigration that told you, I would think you should be fine. If it is your school telling you, then maybe they can give you a document to say there is a delay in processing? And in that case, just don't be in a situation to be asked for your passport/visa??

You probably want AoNang in Krabi, Hua Hin, Koh Samui, or Phuket. You could probably get away without your own transportation in AoNang, but really the rest, you will want your own transportation.
Not too often you are asked by Thai immigration these days, but not unheard of. If they DO ask, it would be beneficial to you if you had a departing ticket (not necessarily a return ticket home). They rely on the airlines to be checking for those things. THAT happens fairly frequently now.
is on the right track. Might be hard for an Asian, but first try cutting out things high in carbs and sugar like rice, pasta, bread, packaged granola, fruit juices, etc. even whole grain versions for a while. It may not be the cure, but could feel a difference in as little as a few days.
