Just read through this group and find an embassy that accepted someone in your position, without asking for tax returns as additional documentation.

Ask your employer to write a document stating that you work for them and that you can work remotely from Thailand.

That's what it looks like. Every company makes it differently, but the information has to include your position and that you are able to work remotely.

Re-entry permits are for long term visas.

All borders aren't closed, but taking a weekend trip to Kuala Lumpur, Phnom Penh or Da Nang was always a better option. Tickets are cheap and you get to travel instead of sitting in a van for a full day.
