 well 2 months could be 59, 60, 61 days. If 59 or 60, do tourist visa because if you enter exempt you would then need an extension. But if 61 or 62 you will need to do extension either way, so you may as well enter visa exempt and avoid the visa fee.

If you are staying for less than 61 days, get the tourist visa. If you are staying 61-75 enter visa exempt and get extension. 76-90 get tourist visa+ extension

Do I need proof of leaving Thailand after 45 days or can I show proof after 75 days?

Depends where you are flying from. For Canadians you just need a return ticket per the embassy website (and I have this confirmed by email that date is not important). On YYZ check-in I was asked how long I was staying (my return date was > 45 days). I was also asked by Thai immigration how long I was staying, but wasn't asked for POOT.

What are my options for obtaining a Thai visa when I'm asked for a letter of invitation from my wife?

The invitation letter can be in English. Just write it yourself in a word doc, print to PDF and then use an online PDF editor to digitally sign it. Also have your wife send a photo of her ID card.

I have a signed invitation letter in Word on my computer, I just change the date every time I apply for a visa

What are the best SIM card options for Koh Phangan and how do they work?

Get unlimited data (albeit at lower speeds). Most ppl get sucked into the max speed plans with limited GBs. 95% will not benefit from super high speeds and then you will find yourself needing to top up every 5-6 days. 6-10 Mbps is fine for Netflix, streaming, video calls etc.

Yes this rule has probably been there since pre-atm days and is long out of date. The only reason they leave it in place is it gives them a box to check when they want to keep someone out. I've also entered a dozen times and never been asked, same with POOT.
