Paper statements dont even exist, banks with no physical branches. Evisa application, everything i sent was a pdf

Since you're cash based it's exceedingly unlikely they're coming for you. If you really wanted to be 100% legal though, ... You'd report everything you brought in. ... These first few years with the new system the compliance level is going to be so low that they're going to eventually tie proof of taxes being filed to renewals or re-entries for those who clearly became resident. This is The logical expectation and speculation of some in the know. One option is to just wait until it's clear they're not going to allow renewals or re-entries without tax forms.... That should probably save you trouble, as you wouldn't need to do anything next couple of years just yet

The irony is that all of my hundreds of logins were in vain. You literally can't download the visa from the website. It's attached to an email and when you log in the website it tells you to go check your email.... So there was no point in checking the status but rather only waiting for the email

What do you mean 5 missing days? It's not possible to staf more than 360 day consecutively legally - end of story. It's similar to how with tourist visas it isn't legally possible to stay more than 60 days consecutively, legally. 30+30extension. (Unless you qualify for a weird family extension etc.).
