It's certainly doable. I know people who stayed here for years like that. For immigration, just be sure to always have proof of lodging, proof of onward travel, and 20k baht in cash.

If you go to an immigration office for an extension early, they add the days on top of your stamp. I think you should try that.

It's either a "letter of reference" or just a copy of your passport with a stamp and signature. In both cases it basically just confirms you are who you say you are :)
