It won't be a big issue if you are late due to the weekend and at worse you may be fined a thousand bahts or so but seriously, you knew of the dates and could have gone much earlier to settle your immigration matters.. ๐คจ
i have been going in and out of Thailand landbased crossborder on countless times year in year out without any issue.. many a times getting out just for filling up fuel fulltank in my own country and then getting back in almost immediately..
I guess maybe it depends on the foreign traveler's nationality also.. just guessing..
I never knew you could do a new passport without having to surrender your old or existing passport of which they would cut off a piece or a corner of your passport... ๐ค
i am Malaysian and i have been entering Thailand by land numerous times year in year out. Many a times i would enter and leave and then re-enter the same day itself without any issue at all.

Flying in from Vietnam should be no problem. My Malaysian cousin who is working in BKK had no problem when he flew back from Vietnam after a holiday there.
She can fly back to Malaysia and then enter Thailand by land through any of the land borders from Perlis all the way to Kelantan. Of course the best choice is at the Bukit Kayu Hitam/Sadao land entry where she can go to Hatyai to catch a flight straight to BKK..
just wanna add a suggestion on proof of exit out of Thailand. You could purchase a cheap bus or train to Malaysia and visit Langkawi Island or Penang Island spending a few days there before returning to Thailand by the same means of transportation too.
