What are the best ways to spend 8 days in Thailand while in Pattaya?

My thoughts exactly. Rayong is home to one of the best beaches in Thailand, Mae Phim, Ban Phe is 15 minutes away. From there you can hop on a speed boat or ferry to Koh Samet. During weekdays there is a good chance the beach will be empty. Plenty of small food vendors line the beach as well. My favorite place in Thailand.
