Go to Immigration to transfer your current stamp to the new passport, as in the moment you get the new one the old one is voided. In addition, new passport implies a new number, usually you can change passports in airports (leave with one, enter with another) but better to play in the safe side for this matter. And, it's possible that you have some issues on leaving on a voided passport because where will the exit stamp go?
To transfer the stamp is a fast task. It took me like 25 minutes in Chiang Mai a couple of months ago, not sure about the queues in BKK but usually there are at least one desk specifically for this task.
By the way, it doesn't matter if your extension is near to finish or still have 11 months on it: this is a kind of a binary thing, it is over or it is not over. "Almost over" is not a state for this matter.
Regarding that bounce... on theory it's possible, but again you would play it safer if you stay overnight in Malaysia. Just leave the airport, go for some shopping in KL or some food in Penang depending or your flight, and come back the next day, not need to hurry up and make immigration officers to wonder (I'd spend at least one week, both KL and Penang are worth that time, but I don't know your circunstances)
If you're going to have a new contract on March maybe your company can write a letter/pre-contract for you just in case the immigration officer queries you about why you were working and now come back as a tourist - but don't show it unless required.
You just go to immigration and get yourself an extension for 1900B.
Overstay for two days would be 1000B and a pretty bad stamp in your passport that could lead to problems in the future. That is if you're not caught during those two days and put in detention.
For a merely 900B difference just avoid problems and get yourself an extension.
I'm studying Thai, but in my school there are foreigners studying English and Chinese under an ED visa... As long as the school and program are guaranteed by the ministry and it isn't the native language of the foreigner, what is the problem with it?
Regarding her situation, I'd say a visit to the Thai consulate in Berlin should get her a Thai passport if she is Thai citizen - but without ID surely it will be needed more paperwork.
Maybe she could just travel to Thailand under her German passport, and arrange everything (ID and passport) while in the country, what surely will be easier. Then travel back to Germany (to get the out stamp) and back to Thailand with her new Thai passport
AFAIK I only can extend an ED three times based on reasons of studying - what I've done already. What's not correct in my opening statement?

I'm just asking about if I acted smart or stupid by extending it on July - I mean, I'd like to know, if I wouldn't extend on July, would I be eligible for extension after amnesty? I'm asking just to make my mind up, just to blame or congrat myself.
I already have my (fare flexible to change dates) plane ticket back to EU for late October as I knew that that is the expiration date of my current permission of stay. I'm not asking "how to stay more and more" - I'm just asking if my movement in July was smart or not.
