I too am British (not proud of it) and have had many visa exemption stamps on arrival. I was told by Trang immigration that the best way for me to make my retirement visa was to convert it from a tourist visa when within Thsiland. There are also many other reasons why prople may opt for a tourist visa rather than a visa exemption stamp. But I won't spoil your fun by explaining it all to you when you can busy yourself by conducting your own fact finding. Originally I was applying for a retirement visa but because Bangkok Bank will not issue a statement to anyone who is outside Thailand who has not previously added their account with the 800,000 baht in to the bank's app I am returning on a tourist visa. The advice being that they can be reluctant to repeatedly give exemption stamps too many times in a 12 month period. Common knowledge apparently.

where did you get told I was booked into a hotel in Thailand trying to get a TM30 which incidentally is the hosts responsibility?

where I am and what I am doing is not really the issue and it is not important for you to know all the details which can change as plans change. What does not change is the requirement in multiple visa application processes for an invitation letter if you plan to stay with family or friends. However what if they do not fit into the box that immigration like to think everyone exists in?
