If you are stying in a hotel, they will have registered you online, ask them tp print a copy of the lodgement, if they cant do that just take a busines card or similar with the hotels name and address, if you are in a private home or air bnb ask the householder to register you online and take a copy or a screen shot of the lodgement. and the exact address written in Thai, that just make it easier for them
With the introduction of the 60day visa exempt, Thailand immigration says if you are abusing that system, you are not a tourist, so get the correct working visa, and follow the rules or we won't let you in.
my wife is similar in that we visit from Australia, be careful what account she opens, my wife had one that hit her with monthly fees. Now she has one that only charges 600bht annually. Also she will probably be able to get the 700bht per month pension. The other thing we do with friends that have kids or grandkids or visiting Australia, we agree a rate and exchange money, saves both parties fees.
I think the number gets reused after a period of inactivity, I have a number on AIS that is prepaid, I have it on a minimal plan and just top it up as I visit 2-3 times a year, however on Some of the Apps, Lazada, Shopee, someone elses photo pops up, being the previous owner of the number. I am noticing that all sections of govt are seemingly more observant of the rules, with the digitisation and automation of passports, and visa exemption, lots more undesirable characters are turning up. It follows that hotels and others will be pushed to do the governments work on searching overstays.

It varies on age, length of stay, whether you want to work, being married to a Thai. Etc Spend an hour or two, list all the options, then download the official docs. As an old guy my advice is as it stands you have no hope, if you are really desperate you may try to get ESL teaching qualifications and get some Micky mouse school to sponsor you, but at the end of the day unless you crack it as a YouTuber or something like that(and there is already a million of them), it will be hard for you to live and work here. Thailands immigration rules are strict and while the government is tinkling around the edges with longer stay visa's they are also cracking down on foreigners abusing their systems.
