Visas actually depend on where you live in Thailand and you should be getting a Visa in your province. If you live in Chiang Mai I might have some solutions.

If you live elsewhere go to your local immigration and ask for agents and see what options come up.

She will need to leave on the one she came in on. But that won't be any problem at all. But definitely do any translating and get things certified at the Thai consulate because that will save some time.
