Just provide an update to your passport scan. Include the picture page and your current visa and entry stamp. No need to cancel your Non-O annual extension… at least I didn’t have to. Once you submit your passport update then the status will change within a day or two to allow you to make an appointment to get the LTR visa issuance appointment.
Check the requirements at the office where you will apply for the extension. I’ve read that some require the funds to be transferred from abroad vice within Thailand.
My LTR was just approved yesterday. I provided 2 years of tax returns. Not all pages were included. Just the ones that had the info they were looking for to prove non-earned income. Also included 1099s for each year. I made it easier by summarizing income sources with a cover letter for each year.
One thing to note is they only will include

your income if it’s a joint account (i.e. investment income).
Add to that the cost of the multiple re-entry permit of 38,000 over 10 years and the cost is less. It’s also a lot less hassle… no banked money in Thailand, includes re-entry permit, no 90 day reporting (it’s 1 year), etc. It also specifically has an exemption on tax on overseas income. I’m in the process of applying now.
The date of my Non-O based on retirement was not the date of application or date I picked it up. It was a date 10 days after the application. It was probably the date they processed or approved it. This was in Chiang Mai.
