One year insurance is going to be expensive. Suggest get a 3 month Non O in UK. Then get 12 month extension in Thailand - doesn't require insurance but does require 800k TB in Thai Bank account for 2 months before you apply. Also you can only apply within the last

days of your visa's end date - unless you get an agent to do it for you.
David Broadfoot My experience of Thai London embassy is that it's very easy. It's all online - fill out the form pay £60. They email you any queries, and a couple of days later get visa emailed to you.
Certainly much better than queuing at the Immigration in Jtiem.
they were very quick - a couple of days. Also were quick processing queries - fir example when I attached screenshot of online banking but they wanted STATEMENTS!
You will get a couple of opportunities to get things right and it depends on who is processing!
If you got any written email or confirmation re insurance covering covid, I would attach that.
I would just send with what you have. When I applied in late feb i didn't attach insurance - they emailed to request. For my 3 month Non O they acceptes free insurance I get with my Revolute card - Thai pass also accepted it.
