Travel insurance, especially from the UK, tends to only cover you for 30 or 60 day trips out of the Country even though it'll be valid for 1 year. Carefully check the small print on the policy!

Residency where? UK? They accept a passport, UK driving licence or utility bill in your name as residency in the UK and yes they should accept the money in a Thai bank account.

The Non Imm O IS the 'retirement visa'. The stamp you get in Thailand is the yearly 'extention of stay'

You can invest in a business on any visa or visa exemption. I doubt you'll be able to work legally in the bar.

Much easier to get the Non Imm O visa in the UK. All done online and usually issued within 2-3 days. Save you a ton of paperwork and a day at Immigration in Thailand
