Lexi Sara yes you need to get a letter from your school stating to cancel the extension on the date you plan to leave Thailand, then take it to immigration to have it cancelled
Don’t forget to cancel your extension (based on ED) before you leave Thailand, as it’s not cancelled automatically on departure, and you could face a fine up to 20,000 Baht for overstay on your next stay in Thailand.
Even though you may return on a new Visa, when you next report to immigration to extend/90 day report etc...they may notice that your previous extension of stay was not cancelled, and subsequently fine you for overstaying that extension!

No, extensions they do not ask for onward travel ticket - but having said that, if for any reasons they have concerns about a person working illegally or anything else etc they can ask and do what they want - and reject the extension by providing get out of Thailand 7 day stamp - but rare!
Jim James that’s stating the obvious...they are all adults here, and it is my opinion they will be fine (so long as they have the required proofs, as I previously mentioned, if questioned)..and I stand by my opinion...no promised any guarantees...not even me 🙂
