The COVID extensions were introduced for people who couldn't get a flight home which was a serious problem in 2020 - it was the generosity of a Thai government that they introduced it. It wasn't for people like you to stay here for two years without getting a proper visa.

That you've managed to exploit that, for seemingly two years - great that you have, but grow the f-up and go and get a proper visa.

Presumably, you're still here on COVID extensions? This isn't hard - go get a proper long-term visa or get on a flight and go home.

we live in interesting times is perhaps overused at this point in COVID. I've been in and out of Malaysia multiple times, last time was August 2018 to get the start of my current Non-Imm B (BOI) visa.

The thing I miss the most - is not being able to go anywhere internationally, at least easily. Living in Chiang Mai, being able to go internationally on even 3-5 days holidays direct before COVID was fantastic. Malaysia, Vietnam, mainland China as examples. Hopefully, those days will come back again.

My understanding is that the hotel was supposed to provide it for you to take with you after the first day of test and go. That said, any pharmacy has them. If in stock, you can also get them at 7-Eleven. My last one cost 100 baht but they can be found cheaper
