Email your UK insurer and request to extend. Many will. Travel to Thailand isn't advised against by the UK govt.

Don't think you'd qualify for an ed visa for an online course that can be studied in your own country any more than a Thai studying online with the UK's Open University would get a UK visa.

Sure, but I'd suggest that the new 60 day extensions have now been (partially) approved and so offices are beginning to roll them out to avoid having to call people back for a stamp change.
