She needs to show she has a good reason to return to Thailand. A job (not bar girl) that pays regularly into her bank and with a contract of possible. Land in her name, a car, dependents like children or parents. Some money in the bank so if you two argue while she is over, she can take care of herself. But money has to have been there a while and cannot be transferred in just before the application. Best to use a decent visa agent and have them help you with what paper work is required. It is doable alone but takes some experience to know exactly what they want to see
as for needing the 30 day extension first, I know that’s a requirement if you’re on a visa exempt, not sure about coming off a tourist visa. You do know you can do a border run from some locations now? Look up which are open again, I know some of the Cambodian, Malaysian and Load borders have opened. You can literally step through immigration on the Thai side, get stamped out, turn around and come straight back into Thailand proper. You will have to do another Thai Pass and get your covid insurance etc… But I had a friend just do this on Cambodian border. You have options.
From Phuket you can 100% get the covid extension. Chiang Mai also highly likely you will receive. Pattaya awkward. Just take your passport, tm30 (form from condo or hotel to state you stay there). T6, the card you received when landing. Copy those 3 things as well as your landing stamp which you can do at any immigration.
it not only about covid insurance. You get a health insurance that includes covid cover. Anyone travelling abroad should have health cover, to be fair.

to be honest, I mainly used to fly the EVA direct flights, as I was usually flying out of Bangkok and I just loved the service from them. This time I’m heading out of Phuket and Thai are the only direct flight back to London.
only wine with dinner or also alcohol throughout? I’m not a massive drinker but, on a long flight I will always have a couple of bloody Mary’s after departure and then a small red with my meal. That usually knocks me out for a few hours.
