Incorrect. You can only enter twice per calander year visa exempt via a land border. No limit on land border crossings with a visa!

You dont need to be married to a Thai citizen, you can also get the 60 days extention having a Thai child providing your name is on the birth certificate.

Can I leave Thailand for the UK and return without losing my 60-day periods on my METV?

You can leave and re-enter as many times as you want all the time the visa is valid which will be 6 months from it's issue date. Each time you enter you'll be stamped in for 60 days.
