First, find out if such a teaching position even exists on a nice island. You won't be the only academic who needs something to eat on their journey of self-discovery and has to take a job. Others have also come up with the idea of taking a teaching job, so it's possible that all the positions are filled. What I'm trying to say is, don't cancel your DTV until you're really sure and have found something permanent and know that you can work there for the next years.
Personally, I like the program PDF24 which is free, offline and you can basically do everything with PDFs, including merging individual PDF files into one
Once the DTV is approved, you have 5 years time from the day of approval to enter Thailand. The validity of the visa is also stated on the PDF that you receive from the consulate.

I'm pretty sure if you visit 20 to 30 bank branches, you'll get a bank account sooner or later. With good planning and a motorbike, you can easily visit 20 branches a day
I understand your frustration, but ultimately you have no choice but to wait. You have decided to spend a "holiday" waiting time in Bali and not in Jakarta. If you were in Jakarta now, you could simply go to the consulate and ask about the status of your visa application. The uncertainty is the price you have to pay now
