What happens to my visa if I leave Thailand before it expires and return before the expiry date?

You'll be stamped out of Thailand on the day you leave and get a 30 day stamp when you return.

If you want longer then apply for a tourist visa from the Thai Embassy and you'll be stamped in for 60 days upon your return.

Both can be extended for an additional 30 days.

From what I understand you can't actually apply for it until 1 Feb so you're stuck with quarantine I'm afraid.

That being said, it hasn't been made official yet so I'm sure more details will be released over the next week or so.

nope, the lack of tourists doesn't have an impact on the exchange rate. Check the baht over the last 12 months, not many tourists yet it's gone up and down like a yo-yo. Thailand has large foreign currency reserves which keeps the baht arguably stronger than it should be.
