it's not a given, immigration can always just outright refuse to give the 7 day get out of Thailand option. The stamp pretty much says that the extension was rejected and you get 7 days to get out of Thailand from the date the passport gets stamped.

the driver can change the amount, as I saw firsthand on Sunday. My 200 odd baht charge to Swampy got changed to 3 baht by the driver with me giving him the difference in cash.

it's definitely an option but drivers will try to get you to pay cash still as they say it's a nightmare to get the money from Bolt via card payments.

Unlimited by air until immigration officers decide you're trying to live in Thailand with a visa exemption or tourist visa if you go down that route.
