With the greatest of respect you do look like you might be on the shady side of 50 (apologies if you're not). Why not just get a proper visa to suit instead of all this crapping around with border bounces and visa runs? It's easy enough to apply at immigration

You can use it right up to the expiry date

All comes down to the relationship between the language school and their immigration office. It's best to first approach a school and give them your situation. If they can do it they will. Whatever happens it's going to cost, but many schools integrate the visa costs into their tuition costs and give you one price

The validity of the visa is one year, hence the insurance required is one year. If the stay is cut short, you can get a refund on the unused full months. There's no monthly options. If you're looking for a cheap insurance which simply ticks the boxes get the 7700 baht policy from Arawan

You're asking people to guess what will happen. Ok, so keep this in mind, the STV was introduced as a stop-gap measure to help people remain in the country during the covid restrictions. There are no longer any restrictions. The STV is now surplus to requirements. It no longer serves any useful function. That should give you the answer

. Difficult to say. How long does a person remain a tourist? It's down to the immigration officer stamping you in, how he perceives your visit. If you've been in the country for a year or longer as a "tourist", they might tell you to get a proper long term visa. Certainly a tourist visa would have better prospects, but no-one can say how immigration will respond
