The gym posted they were surprised at the rejection. They stated that embassies, at least certain ones, were asking for a lot more documentation recently. There is another poster who was implying certain embassies are favouring certain agents

Sorry to hear that. There has been a rash of rejections in Vietnam over the last week. One guy had a 9 months course booked and paid for at a very reputable gym which has had many successful applicants.
