For years they gave a 14-day pass and you could go as far north as Kengtung, but I haven't needed to cross there for the past few years. Would be good to get current firsthand knowledge (with photos or it didn't happen) ;-)
The METV requirements are indeed strict and (opinion) highly unrealistic, but requirements do vary at some embassy/consulates. A Single (SETV) is way easier to get (you're from USA?) which gives you a 60-day entry then can extend 30 days at immigration. Then go to Thai consulate in Vientiane, Penang, etc. and get another SETV and repeat. Total 6 months, use that time to consider longer term options.
You are here illegally, accept your fate - overstay stamp + fine. If you get caught at any checkpoint with a long overstay it could land you in jail. Take this seriously.
If you have any intention of staying another 30++ days and already have a bunch of Thai ink in your passport, get a tourist visa at Vientiane while you have the chance. Takes away the risk. My 2¢ ;-)
Visa-exempt land or sea entries are 30 days (except a few countries who get 90). It changed from 15 to 30 at start of this year. There is a limit of two such entries per calendar year (limit doesn't apply to air entry).
Sad but true, it's primarily the woman's fault for not checking the use-by date on the visa. She went to the embassy on her own so can't blame the agent.
So you have the option of doing land border hop for 30 days visa exempt, which could be extended 30 days more at local immigration for 1900 baht. OR, yes go get a tourist visa in neighboring country which would get you 60 days with optional 30 day extension. Either way you can leave/re-enter by land.
Have you already made two visa-exempt LAND entries in 2017? If so you need to go out and re-enter by air visa-exempt (30 days + 30 more extendable) or go somewhere like Vientiane, Penang, etc. and get a tourist visa (60+30 extendable).
If your intended stay is less than 30 days, just go visa exempt for free. Although your airline may ask for proof of onward travel within that time period.
