What happens if I quit my job after arriving in Thailand? Any idea if they would randomly ask for updated documents during my 180 day border runs

Multi-entry tourist visa question (USA passport)

Is it possible to get a METV without a job? I was denied last time I applied (Washington DC consulate) 6 months ago via their online portal because I’m unemployed. I saved some and am traveling so I won’t be employed for a while.

I’m certain that was the issue bc the consulate and I emailed back and forth a few times about this topic and they specifically said without a letter verifying employment they can’t give me the visa. Is there anything I can do? I can show reasonable savings and I can show passive income (not a lot but decent for Thailand).

Anyone have experience getting the metv? Is it notoriously difficult to get?
