TLDR : Answer Summary
Yes, you can apply for a DTV (Digital Nomad Visa) even if you're unemployed, provided you meet the necessary requirements. It's important to show sufficient funds in your bank account and have proof of enrollment in a Muay Thai course, with some gyms being more favorable for visa approvals. Keep in mind that different embassies may have varying requirements, including possible documentation like payslips or bank statements.

Depends from the embassy, some start to require payslips even for soft-power activities, there are some post here in the group, so really depends where you apply.

I think they want to ensure people have enough income from outside Thailand to live in Thailand, so asking for payslips is quite normal.

Allthough it is not a requirement, it was already meant at the first leaflet about DTV as something that could be asked for.

Especially for soft-power I think it would be logical to ask for payslips, soft power options only cost money and 500K is not a lot when you have no income.

Yes, pay for the course, show 500k in your account and you good to go. Choose a gym with a record of DTV approval.
