Bulgaria....Cheap to stay in Air B&B starts at £7 a night so £70 for the ten days, plus weather is decent as well and on the UK’s green list.

Not much chance of going red in the next 7 weeks.

Apply for your O visa now and it will allow you 3 months grace to to enter Thailand. Once your details are in the system you will get a COE much quicker usually 2 days saves a lot of time and stress.
