You also need to understand, it only takes one jealous competitor or disgruntled local to make a formal complaint and your “shepard” might be arrested. Unless they are a genuine tourist, and I would suggest soemone who is performing any activity that would normally attract an income would not meet that deffinition.
Thai’s are very protective of losing jobs to foreigners, and it could be someone from a hotel, driver or even a relative of theirs who makes a complaint.
As someone else said - foreign tour guides do get arrested. Chinese and famously an Australian recently. Its not what you consider is a tour guide, it’s what the immigrtion police consider.
I would not chance it - as not only may it create costly legal problems here in Thailand, but also back in UK with potential customers impacted making complaints about your operations.
I know of someone a while ago who’s wife owned a guest house (legally) and the husband use to help clear the dishes after meals wit their guests and was arrested and deported for working illegally. It was a local who reported him.

No one suggested “call the embassy” is appropriate for all questions, that is except for you now!

เบนจมิน โรด์ส this group has many benefits because Embassy employees don’t give advice on how to get to an Embassy, which Embassy is easier than others in different countries...many reasons, includng prvidng advice to this OP.
The advice here is general in nature, and the caveat has always been to contact the specific Embassy or Consulate, or view their website, if it relates to their requirements to obtain a visa.
I would trust the advice of the Embassy staff relating to their requirements over someone here...for example the Hobart Consulate has their specific requirements on their website, but when I contact the Consular Official directly I discovered some flexibility...that I could only know by speaking to them directly 🙂
เบนจมิน โรด์ส and no mater what, the only people who can provide 100% correct advice is the embassy or consulate. Things change often as you say, so any people giving advice here is at risk of being outdated, the staff at the embassy would not.
So the advice of this group is to contact the Embassy or consulate they will be applying, if they don’t trust their website!
Australian Embassy does provide an option for Aussies to retain their old passport while their new one is processed, if they need it during the processing stage. Then they must present the old passport to receive the new one, so it can be cancelled accordingly.
I assume your country would have their relevant options in their Embassy website too - always important to check directly.
