I do not have direct (recent) experience, but what we hear in this group and related groups is something like 1-2 weeks. However, even though the eVisa system is online the visa applications are handled by the Embassy/Consulate in your country of residence. How busy they are is highly seasonal and may very well differ from Embassy/Consulate to Embassy/Consulate. So if you really want direct experience then you need someone doing it at the same time of year in Italy. I guess groups for Italian ppl. being tourists in Thailand is where you should try to ask.

, is probably much better, but don't know for sure. I was banned from using the Poi Pet border station trying to do a border bounce years ago. Then I tried to extend my multiple Non-O at my IM, but was denied. Then I tried two other Cambodian borders. One stamped me correctly. The other one stamped me in on a visa-exempt and denied to correct it. When leaving the area from both borders we were stopped by the army asking what we were doing? One time I had to queue up close to the border for yet another passport check.

This is the update on Burma;
The Mae Sai / Tachileik border with Burma in Chiang Rai is closed (they said for a week).
The Mae Sot / Myawaddy border with Burma in Tak is closed as well.
If you want to border bounce you can use the two borders with Lao in Chiang Rai province; Chiang Saen / Special Economic Zone <- where you cross in and out of Lao by boat across the Mekong or the Chiang Khong / Huay Xai border <- where you cross by bridge.
Also the Phu Nam Ron / Htee Khee border with Burma in Kanachanaburi is still not open for foreigners to exit/re-enter.
, again, my Immigration refused to do it. And also, you do not consider the situation I am talking about leaving end re-entering Thailand. Maybe a 60-Day family extension would be possible, not sure. But this is only possible one time in the "lifetime" of your original Non-O. i.e. to get a second family extension you will need a brand new non-extended Non-O. Somehow you assume that when getting an extension on a multiple Non-O it is automatically converted into a single or zero-entry Non-O. It starts to be very creative.
, that contradicts the principle of not being possible to have two visas at the same time, and also my experience from trying to do what you propose. There is basically no reason to extend a Non-O still valid, that was the explanation my IM told me. Let's say some IM would extend it without canceling it in the first place, then what will happen if you want to leave and re-enter Thailand? Now you would exactly have two visas, i.e. your multiple Non-O is still valid, and your Non-O extension also being valid for re-entering with a re-enter permit. Which one should they stamp you on?
, as long as the multiple entry Non-O is still valid you cannot extend it. If that should be possible the visa needs to be cancelled. In practical terms, you must wait to apply for an extension till the visa validity period has ended and your current permitted stay (stamp) has about 1 month till that expires also.
, if they think you are misusing the visa system by being creative to avoid getting a (real) visa, the risk will be there to get stopped and denied entry. It highly depends on your travel history in Thailand, and the officer of the day...
