TLDR : Answer Summary
The Thai Embassy in Denmark is reportedly requiring health insurance for Non-O visa applications based on marriage. It's unclear if this is a recent standard or a remnant of COVID-19 regulations. One comment suggests that some embassies may have this requirement, while entering visa-exempt may bypass the need for insurance.

Some embassies are known for asking for this. Not sure it’s a Covid hangover or not. Enter visa exempt and apply in country. No insurance needed that way.

It also seems like they are asking for proof of funds for even a single entry Non-O. Is this also the new "normal"?
The expectation is you will be extending the single entry, so they are asking for you to meet the financial requirements, which is common at most embassies. You'll need to prove you meet the financial requirements to get a non-O inside the country as well.
, true, but some years ago the 90-Day Non-O for marriage had no financial requirement but only the 1-Year Non-O. As you say, if you are going for an extension then you will have to meet the financial requirements then anyway. It limits how long a visa you can get when married but no money...
You can get a year long Non O in Savannakhet in Laos. Costs 5,000 baht and no need to show money. Does require a border bounce every 90 days but it’s one way of staying long term without the need for funds.
, yes, I know about the Savannakhet trick. Actually, the specific reason why I am not using Non-O Multiple Entry any longer as the border stations didn't believe I had shown money for my Non-O ME and said I was "misusing" the visa system...
Do you mean an actual visa that lasts for 1 year, not extensions of stay? Would that be a multiple entry visa then, that you can enter for up to 90 days on each time?
Is it worth trying to contact the consulate there to confirm there is no requirement to show finances, or is this information recent? Seems like quite the haul to get all the way over there only to find out they want the bank document 😅
, from what I have heard and experienced myself is advisable not to use the Cambodian land borders for the 90-Day border run. Preferably do the bouncing by plane and stay out one night.
, I only tried the land borders, but others advised they had no issues doing it by plane and staying out one night. The Cambodian land borders became notorious difficult during 2019 and onwards. Poi Pet wouldn't let me in at all. Two other border stations stamped me in for only one month like I was on a visa exemption. Then I had to go to Immigration to get it corrected. Immigration on the other hand wouldn't cancel my visa and let me go straight to an extension. I had actually shown 400,000 THB to get my Non-O ME, but no one believed me...
